Baking During A Pandemic Chapter 6: Bubble Tea

Hello Sugar Lovers!

I love bubble tea….do you like that introduction? Well I always wanted to try and make it because there isn’t anywhere for me to get it where I live. So obviously I had to give it a go. Mine is going to be a little different because I wasn’t able to get all the products that I needed. I got the recipe from this lovely website https://healthynibblesandbits.com/how-to-make-bubble-tea/ make sure and go over there and show them some love. Now I have posted this on my social media but I wanted to let you guys know as well. I wanted to try and put a printable recipe on my blogs. I know some people prefer that. Unfortunately I’m not able to with the set up I have for my blogs. I have decided to put the ingredients and all the directions at the bottom of the blog so at least you guys can cut and paste and print it that way. Alright lets get on with the blog!

First thing your going to do is boil your water. Once it is boiled you are going to add in your tea bags. Now the recipe says 8 tea bags. I only had 7 of them so all I did was add 3 1/2 cups of water instead of the 4 cups. It also said to use bagged or loose leaf black tea. I’m not able to have that due to health reasons. So I used my calming tea that I usually use.

While that is steeping you are going to make your simple syrup. When this says simple it is most definitely simple. Your going to boil your sugar and water so that they are combined and have dissolved. This I almost messed up because I left for a few minutes to do some other things. When I got back into the kitchen I had a mini heart attack because I thought it had burned at the bottom. However luck was on my side! Which is strange for me. It didn’t burn though. Once you stir it a few times it is really easy to combine together. Once that is finished your going to pour that into a container of some kind. I used a mason jar as I am sure you guys are not surprised.

Next bring 4 cups of water to a boil and add the tapioca pearls. Your going to know when they are done because they will float to the top. Once that happens make sure you taste one to see if it is to your desired softness. This was a bit different for me because I was only able to get my hands on some small tapioca pearls. This proved to be difficult with straining and rinsing. The recipe calls for you to rinse the pearls. I wasn’t really able to rinse them because they are chunked together. I drained as much water as I could and I did try to use some cheese cloth in order to drain some more water. It didn’t work all that well.

Once your tea has steeped to your desire your going to pour it into a juice jug. It also says to strain it but that would really only be if you are using loose tea leaves. When you have that done you can assemble your drink. I was only making this for myself so I didn’t divide anything up into separate glasses. Your going to add in your desired amount of ice and tapioca pearls. Then add 1 cup of tea 1 1/2 tablespoons of milk (I used almond milk as usual) as well as 1 1/2 tablespoons of simple syrup. Now this is going to be more about how you like your tea and what taste you like better. I myself admittedly had to add more simple syrup it was a bit to bitter for my taste and the second cup I made I added more milk as well. It is really up to you how much you will use of each ingredient.

Ingredients

  • 8 bags of black tea or 3 tablespoons loose-leaf black tea
  • 4 cups hot water
  • 3/4 cup quick-cooking tapioca pearls
  • whole milk to serve (or your choice of milk)
  • simple syrup to serve (or your choice of sweetener)

For the Simple Syrup (see note 1)

  • 1/2 cup water
  • 1/2 cup sugar

Instructions

  1. Prepare the tea: Steep the tea bags or leaves with 4 cups of freshly boiled water. Let the tea sit in water until it cools completely.
  2. Prepare the simple syrup : Add the water and sugar to a saucepan and quickly stir everything together. Heat the water on medium-high and cook until the water boils and the sugar completely dissolves. Remove the saucepan from heat and let the simple syrup cool before transferring to a jar.
  3. Cook the tapioca pearls: Bring about 4 cups of water to boil and add the tapioca pearls.Stir the pearls and wait for them to float to the top. Then, cook them for another 5 minutes. Test a pearl to see if it has reached the desired level of softness. Cook the pearls for another few minutes if they are still stiff. Use a slotted spoon to remove the pearls from the hot water. Quickly rinse the pearls with water.
  4. Assemble the drinks: Strain the tea into a pitcher. Divide the cooked tapioca pearls into 4 large glasses. Next, add a few ice cubes to each glass. Pour 1 cup of the tea into each glass. Add 1 1/2 tablespoons of milk and 1 1/2 tablespoons of simple syrup into each glass. Stir and taste the milk tea. Add more milk or simple syrup to your taste.
  5. If you are serving the beverage to guests, have a small pitcher of milk and the jar of simple syrup ready so that each guest can adjust their drinks to their taste. The drink is usually served with large boba straws (large enough for the tapioca pearls to go through). If you don’t have the straws on hand, you can use spoons to scoop out the tapioca pearls.
