Never Again

Hello Sugar Lovers!

I have failed quite a few times with projects but holy crap. This was the most epic fail of all The Baking Project History …at least so far anyway. I decided in all my wisdom to make my Husband a pie for his birthday. His favourite pie is coconut cream. This is no longer his favourite to say the least.

I knew that I for sure couldn’t mess this up because it was for his birthday so no room for error her guys. So what I did to help my chances is to type in EASY coconut cream pie recipes into google. It seemed more complicated than I thought it would be. However I’m sure if you are an experienced baker you would be able to follow this recipe no problem. I got the recipe by Robyn on Add A Pinch (love that name by the way) I will add the link at the end of the blog for you guys.

You Will Need:

  • Pie Crust (You can make your own or get a pre-made one)
  • 1/2 cup flaked sweetened coconut (for topping)
  • 1 1/2 cup coconut milk
  • 1 1/2 cup half and half
  • 5 egg yolks
  • 3/4 cup of sugar
  • 4 tablespoons cornstarch
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1 1/2 cups of flaked sweetened coconut
  • 1 1/2 teaspoons vanilla
  • Whipped cream for topping

Now I know you weren’t expecting things to go so wrong already but I forgot to cook the crust…yup you heard me…uncooked crust. The best part is I didn’t even realize it until Cody asked me why the crust seemed so doughy….mmhmm. I got a pre-made crust. I like to do this with things that I have never made before just to take out the possibility of something going wrong…we can see how well that turned out.

So once you have BAKED your crust let that cool off to the side. Your then going to heat up your oven to 350 degrees because we need to toast our coconut. All you do is spread the coconut topping portion out evenly onto a pan. I used a small cake pan. The recipe says to leave it in for 8-10 minutes. I seemed to also mess this up when I literally just left it in there for the full time without checking it at all. When the timer went off and this is what I was greeted with…

Yup so mistake number 2 ..or 3 if your counting me even attempting this recipe. So I tried it again watching it like a hawk the whole time. Mine took about 5-7 minutes or so. What your looking for is a nice light golden brown colour. Now what I did is make the pie filling as it was toasting but in hindsight was probably not my greatest move so maybe just focus on toasting that coconut up then move on to the filling.

Next your going to combine the milk, cream and egg yolks together. Whisk them together then set them aside.

Your then going to add your sugar and cornstarch to a saucepan over medium-low heat. This sort of confused me just because I was wondering where the liquid was. Then I kept reading and you add in your egg and milk mixture together slowly into the sugar and cornstarch. Not sure why that took me so long to understand but there it is.

Your then going to let that boil for 1 minute stirring constantly. I messed this up.. too big surprise. I must not have boiled it long enough because it was very runny.

Then you take that off the heat and add in your butter, coconut, vanilla and salt. After that you are good to put that mixture into the pie shell and place it in the fridge. The recipe does say to put some plastic wrap over it when its in the fridge. I figured a piece of plastic wrap wasn’t going to really help me at that point.

I left it in over night and it was still runny when I went into the fridge. I was also getting super frustrated so I decided to just throw it in the freezer thinking that may help the situation. It did in a sense I was able to put the topping on. The way I did the topping was I spooned some whipped cream and smoothed it out a bit so it doesn’t look ridiculous. Then you just add your toasted coconut on top and your done.

…Well its all good if you didn’t mess it up as much as I did. Wow I really did a number on this one guys. Oh well I guess its karma for not posting for awhile now.
