Plain Old Cookies

Hello Sugar Lovers!

I decided this week I would actually ask my Fiance Cody what he wanted me to make. He very quickly informed me that he wanted cookies. He also made it very clear that he wanted PLAIN cookies. No decorations, sprinkles, icings or anything other than cookie. I suppose I have a little bit of a problem with decorations I will admit…..poor guy…..However! I decided to make him happy and make some cookies. So buckle up for an adrenaline thrill ride with these chocolate chip cookies!

Its not so much that I find things like this boring or anything. I just prefer decorating and being creative in that way. I also try not to do this much because quite frankly I don’t want to bore you. So let me know if you would like to see a bit more of these simple baking recipes.

So I decided that if I was going to make some cookies I wanted to make them the soft chewy kind. So how did I do this? ….I went to trusty old google and found a recipe that had that exact title! How original am I? To give credit where credit is due I would like to thank Karina at Cafe Delites for making such a great recipe. It turned out exactly how it was suppose to. So big shout out to Cafe Delites!

I will put a shortened version of the the ingredients for her recipe so you can see everything as I go through the recipe. Make sure you check out her recipe that I will link at the end of the blog!

Ingredients

  • 1/2 cup butter (stick)
  • 3/4 cup packed light brown sugar
  • 1/4 cup white sugar
  • 2 tablespoons golden syrup
  • 2 teaspoons vanilla extract
  • 1 egg
  • 1 1/2 cups all purpose or plain flour
  • 1/4 teaspoon baking soda
  • 1/3 teaspoon salt
  • ¾ cup chocolate chips

*As long as you have a mixer everything else you should be able to find in your kitchen*

Is anyone like me where they get all there ingredients out first? I am a bit strange I need everything out in its place first then I quickly get to destroying my kitchen.

First thing we are going to do is preheat that oven to 350. She was very specific in her recipe that you need to melt the butter, but not completely. She said to melt it about half and half so you better believe I was putting the microwave on for a few seconds at a time. I was not planning on messing this recipe up on the first step! Luckily I was successful. Side note! something that can be very helpful. With stick butters there is actually a measurement scale on the side so you can tell how much to use without having to use a cup or spoon to tell. They even do this on blocks of butter as well. I’m sure most people knew this but it took me a long time to figure out…don’t be hatin!

Once that is done your going to put the butter into your mixing bowl and then mix together the butter, brown and white sugars. For this one she said to make it as smooth as you can until it is evenly blended together.Then you are going to add in the syrup, vanilla and egg. Mix that all together in your bowl.

You are then going to add in your flour, baking soda and salt.

Once that is all done you can then start to mold the mixture a bit. She did say that you shouldn’t add to much flour because you don’t want it to be to dry. I’m guessing this is so the cookies don’t go hard once they get out of the oven. You decided on a soft chewy cookie for a reason people!

This part I did struggle with a little because I really didn’t want to add to much flour. She does also give you small measurements that you can use but no more than that so check that out for sure. Me being me I decided that I was good enough to eye ball it….funny that once I start writing these blogs I realize how stupid I was being. Luckily though this time it didn’t have any dire effects. Your kind of going for a slightly less sticky version of the mixture. I did have a small heart attack when I accidentally dumped about half a cup of extra flour into the bowl. I dug it out though so no harm done. I did most definitely do one of those moments where you freeze and stare at what you’ve done.

All in all though the mixture was successful ….side note….I have said the word success in lots of different way’s in this blog so I am very proud of myself!

After that you are going to get half your chocolate chips and mix them into the batter. I didn’t measure this because I’m not going to be mad a cookie with lots of chocolate chips ya know what I’m sayin.

Once you are done that you are going to get your cookie trays ready with some parchment paper.

Then roll your cookies into balls and place them on the parchment paper. I did 2 trays and the balls were between small and medium. This is something you guys know I always seem to struggle with as well. I always want to make the balls way bigger than I should. So you can probably make yours a bit smaller than I did.

Then you are going to push the rest of the chips on top of the cookies. The recipe makes about 18 to 20 cookies. Mine made 18 cookies.

I would like to take a minute now to appreciate how the amount the recipe yields matches to my amount….never happens….so thank you to all the baking gods.

Once you have them all placed pop them into the oven for 10-11 minutes. I took mine out after 10 minutes. This is a big deal for me, I always want to put it in for a lot longer than what it says to. I always think of one of my favourite Youtuber’s when this happens. Jenna Marbles always says she has the ‘to much gene’ and I certainly do as well. However not this time people! A good point that Karina made is that it will look like they aren’t done but the sides will slightly brown so you can tell they are done. You don’t want to leave them in for to long because they will be just regular hard chocolate chip cookies than.

So leave them to sit on the baking tray for a little bit to let them cool and then your done!
