Oh Snap

Hello Sugar Lovers!

This time we are going to be making some ginger snap cookies! So this is another first for me. I was informed by my fiance that I have to make ginger snap cookies because they are way better than gingerbread. I’m not sure I entirely agree but what the heck! this ones for you babe.

I found this great recipe on All Recipes by Marie Ayers. I will link the recipe at the end of the blog. I tweaked it a little and made it different with the white chocolate dip so that part is optional.

Ingredients

Alright guys lets do this!

So in all honesty I didn’t exactly get off to a great start because I immediately decided to change a step of the recipe. It had nothing to do with the recipe being bad or anything. It was simply an example of Ashley’s laziness. The recipe called for most of the dry ingredients to be sifted twice. As simple as it seems now to have just done it at the time it seemed like a crap ton of work. I will let you know how I created mine and you can also look at the website that has the accurate way to do it!

First thing is your going to pre-heat your oven to 350. Then mix together your flour, ginger, soda, cinnamon and salt. Then you will set that aside to work on the dry ingredients (and if you are feeling spry sift that 2 times)

For the other ingredients you will need to bring out your hand mixer. You mix the shortening until its a smooth consistency. Then you gradually add your sugar, egg, molasses and your dry mixer. With the sugar and dry mixer make sure you add them gradually or else your going to have one big flour mess to clean up.

After you are finished that its time to roll the cookies. So part of the recipe is cinnamon sugar. Now I’m not sure if you can buy cinnamon sugar in the store but you can make it pretty easily yourself. All you gotta do is add sugar and cinnamon in a bowl and mix it up. How much do you ask? I have no idea, its pretty easy to just eye ball. The Baking Project is just killin it with their exact measurements right? So just mix it up until its all blended (so the exact opposite of the picture)

As you can see ^ I tend to clean up after I’m completely done baking. I don’t see the point in cleaning when I’m just going to dirty it up again. So your going to take some doe and roll it into balls then roll the ball in the cinnamon sugar so that its just covering it. Then you just place the cookies on the baking sheet and your ready to go!Then place the cookies in the oven for 10 minutes. I put mine in for an extra 10 minutes which was definitely a mistake. You have to put them in until they brown a bit on top and crack a small amount. Mine weren’t cracking very much so I figured I would keep them in for a bit longer. They turned out a bit harder then I would have liked….so don’t do that.

Now get some parchment paper ready on the counter so that you’re ready for when we melt the chocolate and dip the cookies.

So once your cookies are done let them cool for awhile before you do the chocolate. After that you can microwave your chocolate.Put about half a bag into a bowl and place in the microwave. Now with microwaving chocolate you have to put it on for a few seconds at a time. I put it in for about 20-30 seconds at a time. After each time interval your going to stir the chocolate. Mine took about 3 times in the microwave to get melted. Make sure your all set to dip the cookies because you don’t want the chocolate to go all lumpy. When your ready dip the cookies in half way in the chocolate and then place it onto the parchment paper to harden.

And that’s it! Now again your going to do as I saw not as I do right guys?…good. Mine turned out a little hard like I said but for some reason they also turned out a little salty as well….strange.
