Hello Sugar Lovers!
For this blog I wanted to let you guys decide what to make this week. On The Baking Projects Facebook page there was a poll that was up to see what I would make next. The poll was between Chocolate Chip Cookies and Cheesecake. You guys have spoken and cheesecake has won this round!
I was excited to try this because I’ve never made a cheesecake before so I was pumped! I have to thank my mom who helped me with the recipe details. I also have to apologize to you guys because this blog is going up pretty late. I have no other excuse for this other than I didn’t have all the ingredients. I do have a tendency to mess up my baking so I figured this was at least one thing I couldn’t mess up. So thank you to my fiance for going out and getting me some ingredients.
Alright guys lets get going!
Ingredients:
- 1 Graham Cracker Crust (pre-made)
- 1 Can of Cherry Pie Filling
- 1 Can of Condensed milk
- 1/3 cup of lemon juice
- 1 Brick of Cream Cheese
*Everything else you should be able to find in your kitchen*
First thing your going to want to do is take out the cream cheese and let it get to room temperature so that it is easier to mix. This is something that I messed up. If you don’t leave it out long enough the mixture can turn a but lumpy. Now you guys will be so proud of me because that is the only thing I messed up for this blog!….ya you heard me….I’m amazing.
Next step is your going to want to take the plastic covering off you graham cracker pie crust. This can also double as a lid for on top of the cheesecake. Once you have done that take out all your ingredients. I mixed all my ingredients with my hand mixer in a bowl but if you have a mixer use that. Using the mixer will save you a lot of time and if your mixing it by hand I’m not sure if you will be able to get it to the right consistency. I tried to mush up the cream cheese a little before I added all of my other ingredients.

Then your going to add all your other ingredients. I stirred it a little but just as an experiment to see if you really could mix it all together with a spoon. I’m going to say that’s a negative unless you have an hour to spare.
Now you just have to mix it all together! Keep mixing until you get a smooth consistency. If you were impatient like myself it may be a little bit lumpy but it will still taste good. The first picture does look pretty gnarly but don’t worry it gets better. Look at the lovely final product.
Did you see that sexy mixer? I’m not sure what year it was made but it still works so that’s what counts! Go Eurotech! Just killin it with those 6 speeds.
Once your finished mixing it your going to pour it into the graham cracker crust. I found everything with this recipe was exactly the amount that you needed. You may think the filling will over flow as your pouring it but it is actually the exact right amount for the crust.
After your done that you have to put it in the fridge to let it settle before you can add the toppings on. I decided to put the plastic cover on as it was chilling. It will be fine without it I was just very paranoid that something would fall on it then all my hard work would go down the toilet and I would have to start all over again. That meant it would take even longer to get this to you guys….see…I was thinking about all you lovely people.

I left mine in the fridge overnight. Once you have let it settle you can take it out of the fridge and it will look….exactly how you left it. Nothing amazing happens it just looks more firm. Now its time to put the topping on! You don’t need any fancy tools for this I just used a spoon to get it straight out of the can and plop it onto the top….very fancy lingo her at The Baking Project right? Move it around to where you would like it. I just tried to make sure there were cherries all around and not just the syrup.
After that you are all finished! What’s great about cheesecake is you can put what ever topping on you like and it will always taste good. I wanted to get a nice picture of a slice of it but I don’t think I am capable of getting a good slice of pie picture. I don’t think I will ever be at Pinterest level with my baking game.
