Hello Sugar Lovers!!
So recently I have decided to put up my halloween decorations….in september. To which much of my family does not appreciate. It is my favourite holiday so guys buckle up for a lot of halloween themed posts!
These may look a bit like mini cucpakes but they are actually brownies. It also has a bit of icing on top to jazz is up a little…..also because I have a ridiculous amount of icing left from the baby shower I did. This is a good example of how to be a little creative with your baking. It is a good way to use ingredients before they go bad just like cooking.
Let’s get started!
Ingredients:
- Brownie Mix and all of the ingredients on the box (eggs, oil and water) you should get 24 mini brownies out of this
- Non-stick cooking spray
- Candy Eye Decorations
- Vanilla Icing
- Black Icing Colouring
Tools:
- Mini Cupcake Tin
- Piping Bag
- Circle Piping Tip
*Everything else you should be able to find in your kitchen*
First thing your going to do is to preheat your oven to what ever the brownie mix box says. While your waiting for that you can get started on the batter. You guys know the drill your going to get those ingredients and mix it on up! Once that is done you can focus on your cupcake tins.

So usually you would put cupcake papers in the tins but we won’t be doing this. We will just be taking the non-stick spray and coating the inside of the tin. I have put the cupcake papers in before and they tend to stick to the paper a lot. I haven’t tested this to much but you could put them in if you would like. I would suggest putting a small amount of spray in there. Don’t put to much or it may seep through a bit. Once your done getting that prepared you can put in the batter. Now you will need to do this slowly because if you have never made brownie’s before the batter can be very thick.
Now you can put them in the oven. I only had one tin for 12 cupcakes so if you want to make 24 in a timely manner than I would suggest that you get 2 cupcake tins.

Now this is the part that I had a little trouble with. For some reason brownies can be frustrating for me. I think its because they are so thick that the bake time kind of messes me up. I always set the timer for less than what the box says for bake time so I frequently will check them. I’m sure if you make it enough you could get it down to a science. The thing with baking though is if one thing is slightly off it could really mess with your end game.
So for the brownies I put them on the top rack for about 20 minutes. Then I put them on the bottom rack for about 5-10 minutes. I’m sure you can do this the other way around but I found it worked better for me this way. This is because I put a tooth pick in the middle as you usually do with a lot of baked goods. I was finding that the very tip of the tooth pick (so the bottom of the cupcake) was coming out with some brownie mixer. This is why I decided to put them on the bottom rack for a little while. Once they are done you can take them out and let the cool. Remember to let them cool a little bit in the pan and then you can slowly and gently take them out of the tins. You will also need to let them cool a bit outside of the pan as well.
While you are letting the brownie’s cool you can get started on the icing. I left it until a little bit later in the process just because it is a pretty simple icing to make. Your going to get your icing ready and in the bowl. Then you will be putting in the colouring. This part as far as how much and even the colour you do will be up to you. I almost wish I had done a different colour. I was thinking purple than changed my mind at the last minute to black. It wasn’t a good choice on my part folks!
If you do want to chance the black though you will need quite a bit of colouring to make it that black. Mine was still a bit grey at the end. Just make sure that you keep an eye on the consistency of your icing because if you put to much colouring if will turn a bit runny. Once you have mixed up your icing you can go ahead and put that in the piping bag. You can put this in the fridge until your brownie’s have cooled down.
When the icing and the brownie’s have had enough time to cool you can take your piping bag out and start to pipe on the top of the brownie. I went with a circle tip just like the tip we used in my previous blog Winnie’s Cupcakes in order to get that bee hive look. You don’t have to make this part very big I made mine just a small amount on the top of the brownie. Just enough for some candy eyes to fit on. Once your happy with that you can place the eyes and then your done!
